Now, I’m not a salad kind of girl, but I threw this together before going to a family dinner once and everyone loved it, so I thought I’d share it with you all. It’s really filling, with lots of flavour and colour too.
1 cup white or red quinoa
3 or 4 large stalks of kale
handful of parsley
half a capsicum
half a red onion
juice of half a lemon
salt and pepper to taste
Rinse your quinoa, then cook with 2 cups of water until bubbling. Once the water begins to boil, turn it down to simmer until all the water dissolves. I also like to add chicken stock for flavour while the quinoa cooks, but that’s up to you. Once cooked, transfer the quinoa to a bowl and place in the fridge for a few hours to cool. I prefer it really cold, so will do this in the morning if this is for dinner, or the night before.
Chop your kale, parsley, capsicum and red onion as fine as possible, then add to a bowl with the lemon juice and salt and pepper. Mix through the quinoa and serve.
Serves 4 as the main portion of the meal, or 8 as a small side
